Sabudana Kheer is an easy Indian pudding made with Tapioca or Sabudana. Its rich and creamy and can be made even richer by adding some dry fruits, nuts and saffron. Its very similar to the Rice kheer recipe just the main ingredient here is Sabudana/Tapioca.
This recipe marks my 200th post and its falls during Navratri time when many are fasting. Sabudana being the most popular fasting ingredient thought of sharing this Sabudana Kheer recipe with you all.

Now to the recipe…
1/4 cup Sabudana/Tapioca
1/2 cup water for soaking the Sabudana
2.5 to 3 cups whole milk
2 tbsp raisins
pinch of saffron soaked in 1 tbsp of warm milk
pinch of cardamom powder
1/4 cup of sugar (or to taste)
Wash the Tapioca nicely till the water runs clear. Soak the Tapioca in half cup of water for 20-30 mins then drain and keep aside. The Tapioca will swell up and become 1/2 cup in quantity. Soak the almonds in hot water for 10 mins, peel the skin off and roughly slice them. Similarly roughly chop the pistachios and cashews and keep them aside with raisins. In a thick bottomed pot bring milk to a boil and then add the soaked and drained Tapioca to it. Stir well and cover and cook on low flame until the Tapioca turns transparent (approximately 20 mins). Keep stirring intermittently to prevent the milk and Tapioca from sticking to the bottom of the pan.
Once you see that Tapioca is almost cooked (you should be able to mash it between two fingers), add dry fruits -cashews, raisins and almonds (reserving few for garnishing along with pistachios), saffron soaked in milk, cardamom powder and sugar. Mix well and cook on low heat until the mixture thickens (approximately 30-40 mins). Keep stirring intermittently to prevent the milk and Tapioca from sticking to the bottom of the pan.
- The soaking time for each variety of Tapioca will vary. The larger Tapioca requires more soaking time preferably overnight. Smaller variety can be soaked for 20 -30 mins.
- This kheer has a tendency to thicken as it cools. So while serving adjust the consistency by adding water or milk to preference.
- Make sure to use good quality Tapioca or else it may leave an unpleasant flavor to the pudding.
