Aloo Gobi is a popular Indian dish made with potatoes (aloo) and cauliflower (gobi) cooked with onion, tomatoes, and aromatic spices. This easy spiced potatoes and cauliflower curry is comforting, flavorful, and vegan. It makes a perfect weeknight meal and can be served as a main course or side dish with Roti, chapati, or rice.

Ingredients

Best way to make Aloo Gobi at home is to roast the cauliflower and potatoes before and then add it to the onion tomato masala.

I prefer the air fryer to pre-roast the veggies, oven works too

-Chop the cauliflower head into medium-sized florets. Peel and cut the potatoes into wedges. Keep them in water until ready to use. Pat dry before using

Step 1-4

Add the cauliflower florets to the air fryer basket spray with oil, and ½ teaspoon salt, and mix well. Airfry for 10 mins. Repeat for the steps for potatoes. 

Step 5-8

Saute cumin seeds with onion until golden. Add the ginger garlic and chili and saute until aromatic. Then add the spices and mix until combined

Step 9-12

Cook tomatoes until soft. Then add the air-fried cauliflower and potatoes.  For final touches, add crushed kasuri methi and cilantro. Aloo Gobi is ready to serve

Step 13-16

Delicious Punjabi-style Aloo Gobi recipe is ready! Serve it with Indian bread like freshly made chapatis, rotis, paratha, or naan!
