Baked Chicken Nuggets

Healthy version of the store-bought chicken Nuggets made with Minced chicken flavored with some spices, coated with breadcrumbs and baked. These are crunchy on the outside and soft and juicy on the inside and taste so much better than store bought.

Ingredients
  

For the nuggets:

  • 1 cup Minced Chicken using chicken breast washed and drained completely
  • ¼ cup packed potato boiled and mashed, (approx half medium potato)
  • ¼ cup parmesan cheese grated
  • ½ teaspoon salt or to taste
  • ¼ teaspoon pepper
  • ½ teaspoon garlic powder
  • 1 tablespoon lemon juice

For the coating:

  • ½ cup plain panko bread crumbs
  • ½ teaspoon dry oregano
  • ¼ cup grated Parmesan cheese
  • ½ teaspoon dry parsley flakes
  • dash of salt optional

Instructions
 

  • Preheat the oven to 400F. Line a baking tray with aluminium or parchment and spray with oil.
  • Pulse the panko crumbs in food processor (optional) and then spread them evenly on a parchment lined baking tray and bake for 3 minutes, mixing and spreading half way through.
  • Remove and transfer to a mixing bowl, once they are cool enough add all the remaining ingredients for the coating, mix and keep aside.
  • In a mixing bowl, add all the ingredients for the nuggets and mix to form a ball.
  • Divide into equal portions (15 using approx tablespoon measurement) .
  • Apply some oil to your palm and shape the nuggets into oval shape or as you like and dip them in the coating mixture and place them on the prepared baking tray.
  • Spray the nuggets with some oil and bake for about 20-25 mins rotating and flipping half way through.
  • Optional Step - You can broil these for 4 minutes rotating half way through for more browning.
