Sweet Lassi - Punjabi Sweet Lassi

Sweet Lassi is a popular North Indian drink made from yogurt, milk, sugar and flavored with cardamom. This refreshing and creamy summer drink is served chilled and doubles up as a dessert too!!

Equipment

Ingredients
  

  • 2 cups yogurt curd
  • 1 cup milk chilled or water (chilled)
  • 4 tablespoon sugar adjust to taste
  • ½ teaspoon cardamom powder
  • 1 cup ice cubes
  • Chopped pistachios and almonds for garnishing, as required
  • Rose petals for garnishing, as required

Instructions
 

  • In a blender, add all the ingredients like yogurt, milk, sugar, cardamom powder, and ice cubes.
  • Close the lid and blend until smooth and frothy. Adjust milk (or water) and icecubes quantity based on the consistency you like. Rich and luscious sweet Punjabi Lassi is ready.
  • To serve, pour in a tall glass and garnish (optional) with some sliced pistachios, almonds, and some dry rose petals (to make it fancier). Enjoy!

Notes

Yogurt - Preferably use homemade full-fat yogurt that is fresh and not too sour in taste. Sour yogurt will need more sugar to sweeten lassi.
For creamier lassi - Use chilled whole milk (full fat) yogurt (or greek yogurt) and milk combo.
For a lighter lassi - replace full-fat with reduced-fat or low-fat yogurt and milk but that won't result in an authentic lassi taste.
For thicker lassi - reduce the amount of water or milk.
For vegan lassi - replace with almond milk and yogurt or any vegan-based option. 
Flavor options - a dash of rose water and few strands of saffron can also be added to the lassi along with cardamom. You can also skip them. 
Sweetener - Adjust sweetness to your taste. Instead of sugar, you can also use honey or jaggery. Substitutes will change the taste slightly.
