Ingredients

Rinse the lentils and then pressure cook them in Instant Pot or pressure cooker with water and salt. Whisk once done. Keep aside. 

Step 1-4

Heat oil in a pan and make a tempering of mustard seeds, cumin seeds, fenugreek seeds, asafoetida, and curry leaves. Add onion and veggies and saute for 2 mins. 

Step 5-8

Stir in tomatoes and cook till soft. Add in spices and saute for a min. Add water, cover, and cook until veggies are done. 

Step 9-12

Add tamarind pulp, cooked dal,  and adjust consistency with water. Bring sambar to a simmer. Finish with jaggery and cilantro and simmer for 5 more mins.

Step 13-16

Delicious Hotel-style Tiffin sambar is ready!! Serve with freshly steamed soft Idlis and chutneys
