Khaman Dhokla

Soft and Spongy

Khaman Dhokla is a soft, fluffy, savory steamed cake, made from gram flour and spiced with green chili, ginger, and spices. It is lightly sweet, tangy, and perfect for breakfast or a snack

Ingredients

Make Khaman batter by mixing together besan (gram flour), turmeric, semolina (sooji), sugar, salt, citric acid, ginger, green chili,  oil, and water. 

Step 1-4

Grease a stainless steel bowl and prepare the steamer. Once the water starts bubbling, add ENO to the batter with 1 tablespoon of water. Whisk until everything is well mixed

Step 5-8

Immediately transfer the fluffy khaman batter into the greased bowl—steam for 20 mins. Allow to cool slightly. Check if the knife inserted cmess out clean. 

Step 9-12

Allow to cool. you will see the edges pulling away from the side of the pan. Run a knife around. Flip on to a serving plate. Cut into squares.

Step 13-16

Make the tempering with oil, mustard seeds, sesame seeds, green chiles, curry leaves, and cilantro. Add sugar water to it and spread it over the dhokla.

Step 17-20

Khaman Dhokla is ready!

Enjoy these for breakfast or snacks on their own  with your green and tamarind chutney!
