Ingredients

Add the cut veggies to a bowl and mix with olive oil and spices. Transfer to the lined and greased baking tray

Step 1-4

Bake at 400°F for about 25-30 mins until the veggies are done (fork tender) and golden brown. To the baked warm veggies,  add maple syrup, cranberries, cilantro

Step 5-8

Just before serving, add grated cheese, lemon juice, crunchy pecans or walnuts. Toss everything together and serve garnished with fresh cilantro
