Chabeel is a refreshing rose-flavored summer drink made with just 3 ingredients and is ready in 5 mins. It is also called Kachi Lassi and is light refreshing and an excellent thirst quencher with cooling properties.

The very first time I had Chabeel was in Gurudwara. Ever since a big pitcher full of chabeel is always stocked up in our fridge during summer. It is so easy to make that even kids can make it.

Everyone who has tried this summer drink is addicted to it. It makes a great welcome drink and is best for pool parties since it's light, refreshing, and the best thirst quencher.

Our other favorite summer drink is Aam Panna so definitely give it a try too!!

What is Chabeel

Chabeel is a sweetened rose-flavored non-alcoholic drink from the North Indian state of Punjab.

This Punjabi drink is also known as Kachi Lassi where kachi means uncooked and lassi is a popular drink made from yogurt. In Chabeel however, instead of yogurt, milk is used which makes it lighter compared to traditional Punjabi lassi

There are many variations of chabeel but the rose-flavored one is the most popular which I am sharing in today's post.

Chabeel is an extremely easy cooling drink made with just three ingredients - water, milk, and rose syrup. It has a lovely light pink color, is sweet in flavor, and is best served chilled.

During summers, Chabeel most times is part of the langar in remembrance of the martyrdom of Guru Arjan Dev Ji, the fifth Guru of Sikhs.

In addition to Gurudwara, it's a common sight in Northern India, during summer to see multiple stalls distributing Kachi Lassi to the commuters/passerby to soothe their parched throats.

It is very similar to the lemonade stands we see in the USA just that Chabeel is always given free as it's considered a social service of the highest order.

Kachi Lassi Benefits

Kachi lassi is known as a great thirst quencher and for its cooling properties.

It helps keep the body cool during the hot summer and also help reduce acidity.

It is light and refreshing which helps reenergize especially after a hot day without weighing you down.

Chabeel Ingredients

Chabeel is a mix of just three ingredients water, milk, and rose syrup.

Milk - I use whole milk for this recipe. The rule here is it has to be more water than milk. The consistency should be more like diluted milk. So if you are using 1% or 2% milk you can reduce the water quantity according to your preference.

Water - Use chilled water as chabeel tastes best served chilled. In addition, I add ice cubes for instant cooling.

Rose Syrup - The rose syrup I've used for this recipe is Rooh Afza which is already sweet so I don't add any sugar. But you can add sugar to taste depending on the type of rose syrup you are using.

How To Make Chabeel (Step by Step Method)

It's really easy to make Chabeel or Kacchi Lassi.

Steps for mixing milk, water. rose syrup to make chabeel (kachi lassi)

In a large mixing bowl or pitcher/jug add the milk, water, Rooh Afza, and ice. Mix until well combined. Serve immediately or keep it refrigerated until ready to serve.

Sweet rose-flavored summer drink Chabeel- Kachi Lassi is ready. Serve chilled. Enjoy!!

Recipe Tips

You can vary the proportion of water to milk as per your taste. Typically the street style is more watery but you can always add more milk, especially for kids.

I use sweetened rose syrup (Rooh Afza) so I skip sugar as the sweetness is perfect for our taste. You can add sugar based on the type of rose syrup used.

The amount and type of rose syrup used will change the color of the drink, and the flavor and sweetness too.

Chabeel is best served chilled so keep it refrigerated. It stays good for 3-4 days when refrigerated.

You can easily double or triple the recipe.

For added cooling and to make it even healthier, add some soaked sabja seeds (sweet basil seeds) to the chabeel. Soak 1 teaspoon of seeds in 1 cup of water for 30 mins, drain the water, and then use.

  • ½ cup rose syrup Using Rooh Afza
  • 2 cups milk used whole milk
  • 4-5 cups water
  • 1-2 cups ice cubes
  • Sugar to taste optional - I didn't add any
