Peach Raspberry & Cucumber Salad

Peach Raspberry & Cucumber Salad is refreshing fruit salad which goes perfect as evening snack. Its a great alternative to fried/junk snack items especially if you are watching your weight or even otherwise. Just like other salads, this recipe calls for mixing the main ingredients (fruits here) with the dressing which is made of mint, lemon juice, honey & roasted cumin powder. The addition of cucumber provides the right balance of crunchiness to this otherwise soft fruit salad. 


I am not really a book person, but these days I've been reading (read turning pages) of a few cook books I got from my library. During a quick glance through one of the books(Cooking Light Salad) I got attracted to this colorful & refreshing salad. Had to make it the very next day & ever since have been hooked to it. I usually have the ingredients required for this fruit salad dressing in my pantry so simply mix & in no time I've this refreshing salad to eat giving me the perfect boost & energy to gear up for making a scrumptious dinner. 

Ingredients: 
1 peach
½ to 1  cucumber (depending on size)
few raspberries
few fresh mint leaves 
juice of ½ lemon 
½ teaspoon lemon rind
1 tablespoon of honey
½ teaspoon of roasted cumin seeds powder
salt & pepper to taste

Method: 
Wash the peach, raspberries & cucumber. Now cut the peach into half, remove the seed & make thin slices. Similarly cut the cucumber into half, seed the cucmber by scarping off the seeds with a spoon & then cut into thin slices

Tip:Ensure peach, raspberries & cucumber are cold or kept in fridge before making this salad as it will taste better. You can use frozen peaches after thawing them. However frozen raspberries are not preferred as they don't give the fresh fruit feel to this salad 

Now combine the peach & cucumber slices into a bowl. Tear the mint leaves into small pieces & add. Then add lemon juice, lemon rind, honey, roasted cumin seeds powder, salt & pepper. Mix well. Last but not the least add the raspberries & mix well. 

That's it our, refreshing Peach, Raspberry & Cucumber Salad is ready. Don't wait, serve it immediately!

    Hi Kathleen, roasted cumin seeds powder can be made at home. to make it you will need some cumin seeds. roast them on pan till they turn slightly darker & start leaving a wonderful aroma. allow to cool & then grind. Store it in airtight container for future use. Hoping you will try it 🙂
