Instructions
For Masala Baked Beans
Heat butter (or oil) in a pan on medium heat.
Add cumin seeds and let them sizzle for a few seconds.
Add chopped onions and green bell pepper and sauté until translucent
Stir in garlic and green chilli. Cook for another 30 seconds.
Add spices: Cumin powder, coriander powder, Kashmiri red chilli powder, oregano, garam masala, and salt. Mix well and cook the masala for 30 seconds. Optional: Add a splash of water if the masala starts to stick.
Add Chili sauce followed by baked beans (with sauce - see notes)
Stir everything well so the beans are fully coated in the masala mixture.
Lower the heat and let it cook for 3–5 minutes, stirring occasionally.
The sauce will thicken slightly and absorb all the masala flavors.
Turn off the heat and add lemon juice and mix in chopped cilantro leaves. Taste and adjust salt or spice if needed.
For Toast:
Heat a griddle or pan on medium heat.
Spread a thin layer of butter on the bread, then place it butter-side down on the hot griddle. Toast for 1–2 minutes until that side is golden and crisp.
Apply butter to the top part of the slice. Flip and cook the other side. You can also Air fry the bread at 370°F for 3–4 minutes until crisp.
Rub a cut garlic clove on the hot toast for instant garlic flavor.
For assembling:
Place your freshly toasted slices on a plate or board
Generously top each slice with masala beans. Spread evenly to the edges so every bite is flavorful.
Top with cheese, chopped red onions, green chili, or jalapeno (optional).
Place the assembled toast in a preheated air fryer and air-fry it at 350°F for 3–4 minutes. You can also bake it in a preheated oven at 400°F for 6–8 minutes, or broil it for 1–2 minutes, until the cheese is melted and lightly golden.
Finish with a sprinkle of chaat masala and serve immediately. Cut in triangles or squares if needed and serve immediately.

Notes
Choose the Right Baked Beans: If you are a vegetarian, check the label since U.S. baked beans are not vegetarian by default. Heinz baked beans are vegetarian, and I prefer these for their mild, tomato-based sauce, which pairs well with Indian spices.
Adjust Sweetness: Canned baked beans vary in sweetness and salt levels, so it's best to taste the beans once they are warmed and adjust the seasoning as needed. If the canned beans are too sweet, drain off some of the sauce before adding it to the masala mixture.
Control the Spice: Adjust the green chilli and Kashmiri chilli powder to suit your spice preference.
Toast the Bread Well: Use thick slices of bread, such as sourdough or white bread, and toast until crisp and golden. Assemble just before serving to prevent sogginess.
For the vegan baked beans recipe: use oil instead of butter and skip cheese, or use dairy-free cheese.
