Eggless Nutella Cookies

Nutella Cookies have been on my list of to-do recipes for so long....finally this weekend I had the opportunity to bake these goodies. These cookies came out chewy & soft with the cookie crust a bit crisp. These cookies go fabulously with a glass of milk for breakfast or a snack in between meals & perfect to curb the dessert cravings post meal. All Nutella lovers these cookies are a must try. 


Am 99% sure that Nutella doesn't need an introductions but for the 1% who are now getting introduced to Nutella - It  is a smooth & sweet chocolate hazelnut spread. The only drawback or caution if I may call for baking these cookies is that you cant stop having just one cookie they are that addictive. I baked these in two batches but by the time the second batch was in my hubby & me almost finished the first batch. 

Ingredients:  (makes around 15-20 cookies)

1 & ¼ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt 
½ cup butter (1 stick)
½ cup sugar
½ cup brown sugar (or you can use regular sugar too)
1 teaspoon vanilla extract
⅓ cup Nutella (roughly 5 tbsp)
¼ cup milk (at room temperature)


Also required - baking tray & parchment paper



Method: 
Preheat the oven to 325°F. Line a baking tray with parchment paper & keep it ready
In a large mixing bowl, whisk the sugar & butter together till soft & creamy. Add vanilla extract & milk to it & whisk again to get a smooth batter
Now add the Nutella & mix. Mix salt, baking soda into the flour & Sift these into the Nutella batter. Mix well to get a smooth dough like batter. The consistency should be such that you should be able to make soft balls with this batter. 
Make small balls, slightly flatten them & place them equidistantly on the baking sheet lined with parchment paper. Bake for 10-12 mins or until the cookies start to crack on the top. Remove from the oven and allow them to stand for about 5 minutes and then transfer the cookies to a cooling rack and allow them to cool completely.

Note: 

  • Don't over-bake these cookies else they will turn hard & crisp instead of soft & chewy. 
  • Add more flour if required to get the correct dough consistency i.e. to roll the dough into a ball. 
  • Feel free to add more Nutella but then reduce the amount of sugar as Nutella is sweet.

That's it, our soft & chewy Egg-less Nutella cookies are ready, Enjoy them at breakfast, as snacks or even dessert
