Potato Fry

 Potato Fry is a very basic and simple recipe using just potatoes and Indian spices. Its a non onion garlic recipe thus perfect for beginners who are venturing in the cooking world. This dish can be used in multiple ways. For instance like a sabji (side dish) with roti/chapati/flat-bread or dal rice. Or as a filling for your sandwiches,rolls or paratha. 


This is my mom's recipe and one of my favorites. She served this dish with Varan bhaat (which is basically maharashtrian dal rice) pickle and salad on the side. Very simple yet the most tasty meal. She would slightly crisp the potatoes giving a few of them a nice crunchy texture. yumm! This dish is spicy but you can always reduce the spice levels to your taste. 

Now to the recipe...


Ingredients: 
4 medium sized potatoes peeled and cut in cubes
1 teaspoon mustard seeds (rai)
1 teaspoon cumin seeds (zeera)
¼ teaspoon asafoetida (hing)
½ teaspoon turmeric powder
1 teaspoon red chilli powder (or to taste)
1 tablespoon coriander seeds powder
¼ teaspoon garam masala
1 tablespoon lime juice
2-3 tablespoon finely chopped coriander leaves
1-2 tablespoon oil
salt to taste


Method: 

Soak the cut potatoes in water. In a vessel heat oil and once hot add the mustard seeds. Once they start spluttering add the cumin seeds. Drain the water from the potatoes and add them to the oil. Be careful as the water may cause oil to splash a little. Mix everything well and cover and cook for about 5 mins on medium heat (stirring intermittently). Now add all the spices powder like turmeric, red chilli, coriander seeds and garam masala & salt and mix well. Cook till potatoes are cooked (approximately 5 mins more) Now add the lime juice and coriander leaves and mix.



That's it, simple easy and delicious Potato Fry is ready. Serve this hot as a side with your Roti/Chapati or Dal Rice Or use as a filling for your sandwiches, rolls and paratha's.
