Chicken Nuggets that too homemade and baked...yaaaassssss!! Who doesn't love Chicken Nuggets?? Be it kids or adults everyone loves them. Be it as an appetizer or after-school snack or as a side for those quick lunches and dinner, these sure get finished first.
My kiddo loves chicken nuggets and I would make sure to stock my freezer with those store bought varieties as its convenient to just heat and serve. But then came those series of recalls and warnings due to contamination asking to return these products back. Well we had eaten almost half the packet and now you ask to return?
Like most mom's I panicked and stopped getting those anymore. But my kiddo would keep asking for them. So I thought how difficult it would be to make these at home. Some effort required obviously but at least I'm 100% sure what I'm feeding my kid.
Surprisingly these are super easy to make and requires just a few ingredients. Minced chicken flavored with some basic spices, coated with breadcrumbs and baked. Isn't that easy?
These were a hit at the very first trial. Crunchy on the outside and soft and juicy on the inside. I would rate these much much better than store bought!!
Make these in bulk and they freeze great. At the serving time just warm these in the oven or microwave and you are set. Serve these with Ketchup or Mayo or combination or both and lots of love.
How to make chicken nuggets at home
Preheat the oven to 400F. Line a baking tray with aluminium or parchment and spray with oil.
Pulse the panko crumbs in food processor (optional) and then spread them evenly on a parchment lined baking tray and bake for 3 minutes, mixing and spreading half way through.
Remove and transfer to a mixing bowl, once they are cool enough add all the remaining ingredients for the coating, mix and keep aside.
In a mixing bowl, add all the ingredients for the nuggets and mix to form a ball. divide into equal portions (15 using approximately tablespoon measurement) .
Apply some oil to your palm and shape the nuggets into oval shape as shown in pic above or as you like and dip them in the coating mixture and place them on the prepared baking tray.
Spray the nuggets with some oil and bake for about 20-25 mins rotating and flipping half way through. Optional Step - You can broil these for 4 minutes rotating half way through for more browning.
That's it, our healthy and homemade Baked Chicken Nuggets are ready. Serve with some Mayo and Ketchup. Enjoy!

Baked Chicken Nuggets
Ingredients
For the nuggets:
- 1 cup Minced Chicken using chicken breast washed and drained completely
- ¼ cup packed potato boiled and mashed, (approx half medium potato)
- ¼ cup parmesan cheese grated
- ½ teaspoon salt or to taste
- ¼ teaspoon pepper
- ½ teaspoon garlic powder
- 1 tablespoon lemon juice
For the coating:
- ½ cup plain panko bread crumbs
- ½ teaspoon dry oregano
- ¼ cup grated Parmesan cheese
- ½ teaspoon dry parsley flakes
- dash of salt optional
