Linguine with Pesto & Roasted Tomatoes

Linguine with Pesto & Roasted Tomatoes is yet another pasta dish, from my Italian hat, with the green sauce called Basil Pesto. I used Linguine pasta for this dish but you can make this with any pasta of your choice. I prefer to add my Oven Roasted Tomatoes as they not only compliment color wise but also taste wise. Best part is that both the key ingredients "Roasted tomatoes" & "pesto sauce" can be prepared well in advance & stored in refrigerator to use as required.  Thus making it possible to fix a quick and fancy meal for your family in a jiffy. 

You don't really need exact measurements for this recipe. The amount of pesto tomatoes and cheese can go as per your preference but I have mentioned the quantities I used. You can get the detailed step by step recipes for Basil Pesto and Oven roasted tomatoes from the links below:

Now to the recipe...



Ingredients: 

0.5 lb (pound) Linguine pasta or any pasta of choice
¾ cup of oven roasted tomatoes (or to taste) 
¾ to 1 cup of basil pesto sauce
1 cup of grated parmigiano reggiano 
salt and pepper to taste

Method:  

  • Bring water to boil and season it well with salt. Now add the Linguine pasta and cook as per package instructions (approximately 10 mins), drain the pasta water reserving half cup of this starchy water which we will use to adjust the pesto consistency. Transfer the pasta back to the pot. 
  • Now add the basil pesto & roasted tomatoes to the cooked linguine. Add starchy water if required to adjust the consistency & mix well.  As soon as the pesto comes in contact with the warm pasta you will get a nice aroma. Check the seasoning and add salt and pepper if required. 
  • Top it with grated parmigiano reggiano cheese reserving some for ganishing and mix again.


That's it our delicious and colorful Linguine with Pesto & Roasted Tomatoes is ready. Serve it hot topped with some more parmigiano reggiano. Enjoy!!

      Linguine with Pesto Sauce
      (Linguine con pesto)
      Ingredients

      • 60 gm fresh basil leaves
      • 3-4 cloves gsrlic
      • 45ml pine nuts
      • 1/2tsp salt
      • 50g parmesan cheese
      • 4tbsp Pecorino cheese
      • to taste pepper
      • 500gm linguine
      Method
      1. Place the basil, garlic, pine nuts, salt and olive oil in blender and blend until smooth paste.
      2. Take it in to bowel take greeted cheese and paste mix it together now linguine with pesto sauce
