A creamy, homemade no-churn strawberry ice cream made using fresh strawberries and swirled with mango puree. It is the best summer dessert ever!!

Our favorite summer activity this year has been making fresh homemade ice cream especially fruit flavors like strawberry and mango. These fruits are so sweet, juicy, and just perfect!!
Kids couldn't decide which flavor they loved most so we combined the two together to give this extremely delicious and creamy strawberry-mango swirl ice cream!!

To make strawberry ice cream we need to make a fluffy vanilla ice cream base and then layer it with mango puree and create swirls.
Thus this recipe will give you three different ice cream flavors using the same ingredients - classic vanilla, strawberry, and strawberry mango. Now isn't that awesome!!
I prefer to keep the strawberry flavor more pronounced and just have bursts of mango throughout but you can definitely add more mango.
It is seriously the best and the freshest!! So without further ado lets see how to make it!!
Recipe Ingredients
- For the ice cream base - Heavy whipping cream, sweetened condensed milk, vanilla extract, and salt.
- Strawberry Puree - fresh strawberries pureed without any water or sugar.
- Mango Puree - 1 fresh mango pulp pureed without water, add sugar depending on mango sweetness. Or use store-bought sweetened Alphonso or Kesar mango pulp.
Step by Step Instructions
To make the eggless vanilla ice cream base
I use my kitchen aid stand mixer with the wire hook attachment to make the base. You can also use a hand mixer.
Put the stand mixer bowl and whisk attachment in the freezer 15 mins prior to making the ice cream. Ensure the whipped cream is chilled and in the refrigerator until ready to use.
1 & 2 - Using a stand mixer fitted with an attachment, whip the cold whipping cream on medium/ high speed until soft peaks form (about 2- 4 mins).
3 - Switch off the stand mixer and add in the condensed milk and vanilla extract.
4 - Turn on the stand mixer to high and whisk until the mixture is thick, fluffy and forms stiff peaks (about another 2-3 mins). Turn off and take the bowl out.
Vanilla ice cream base is ready!! This can be frozen to make delicious creamy vanilla icecream.
To make strawberry ice cream
5 & 6 - Stir in strawberry puree into the fluffy vanilla ice cream base and gently fold using a spatula until well combined and even in color.
7 & 8 - Fresh strawberries give a light pink color. If you prefer a bit of dark pink color, add in a drop or two of red food color (completely optional) and gently fold (using a spatula) again until well combined.
Strawberry ice cream is ready!! This can be frozen to make delicious creamy strawberry icecream. To take it up a notch, follow the below steps.
To make mango swirls
9 - Take a freezer-safe, airtight ice-cream container with lid, and in it add half of the strawberry ice cream base and sprinkle in half of the mango puree.
10 - Make swirls using a knife or back of a spoon.
11 & 12- Pour the remaining strawberry ice cream base and sprinkle the rest of the mango puree and make swirls again. Ensure the spoon or knife runs till the ends.
Close the lid airtight and immediately transfer to the freezer. Freeze for a minimum of 8 hours or overnight before eating.
Creamy, homemade no-churn strawberry-mango swirl ice cream is ready!!
Serving suggestions:
This ice cream will freeze solid so before serving take the container out and let it sit out for 10 mins which allows the ice cream to be scoopable.
Serve as is or with toppings like fresh mango and/or strawberries pieces or nuts in a bowl or some waffle cones.
Storing homemade ice cream
Now that we have our delicious homemade ice cream ready, it's important to store it correctly. It can last for up to 6 weeks or more in the freezer if stored right. I bet it will be gone way before that.
- Use a good quality, freezer-safe, airtight container with a tight lid.
- Store ice cream at the back of the freezer where the temperature is coldest.
- As you eat, place a plastic wrap directly touching the surface of ice cream to prevent freezer burn.
Strawberry Mango Ice cream
If you don't like the swirls, divide the vanilla base into two parts and add strawberry puree to one and mango to others and fold in to mix. Alternately layer or swirl these together to make delicious Strawberry Mango Ice cream.
Recipe tips and notes
- Use fresh, red, and in-season strawberries for the best flavor. Frozen can be used as an alternative when fresh are not in season.
- You can use fresh mangoes or store-bought mango puree for the swirls.
- Chill the whisk and bowl before you start whipping.
- Adding food color is optional and will just enhance the color with no change to flavor.
- For smoother ice cream, freeze as soon as your ice cream is poured into the container to prevent ice crystals.
Frequently asked questions
Yes, but adding fresh strawberry pieces as is to the ice cream may cause it to freeze ice solid and spoil the taste of the otherwise smooth ice cream. So to avoid that, macerate the strawberries with little sugar and alcohol (vodka) to draw out the moisture and then add.
Ideally, fresh and in-season strawberries work best but frozen can be used as well. Thaw the berries and then puree them.
Use an airtight container to store icecream and place a plastic wrap touching the surface of the ice cream before you put the lid on.
