Healthy food often gets labelled as boring and tasteless. But this Chickpea Salad is here to prove that wrong. Chickpea is also know as Garbanzo beans or Chana and is a great source of proteins. This simple yet full of flavor salad can be served as an appetizer/snack or salad with your meal.
“You eat with your eyes” – this saying is so true. You never want to eat a dish that looks dull and unappetizing. So I like to spruce up my salad by adding a variety of colorful veggies like red & green bell peppers, carrots, tomatoes cucumber onions. But choice of veggies is totally yours. For the dressing, I have used freshly minced garlic as I like a slight garlicky taste to this salad but if you want to skip it thats totally fine too.
Now to the recipe…
Ingredients: (Makes 2-3 servings)
For the Dressing:
1 clove of garlic minced
1 tsp roasted cumin seeds powder
1/2 tsp red chilli powder (or to taste)
1 tbsp lemon juice
1 tbsp olive oil
1 tsp chaat masala
salt and pepper to taste
For the Salad:
1 cup of boiled chickpeas
2 tbsp peeled and finely chopped cucumber
2 tbsp peeled and finely chopped carrots
2 tbsp finely chopped tomatoes
2 tbsp finely chopped red onions
2 tbsp finely chopped red bell pepper
2 tbsp finely chopped green bell pepper
2 tbsp finely chopped spring onion green
2 tbsp finely chopped coriander leaves
In a bowl combine all the ingredients listed for dressing and mix well so that everything is well incorporated
In another bowl mix all the ingredients listed under salad (except coriander leaves). Pour the dressing over the salad (just before serving). Toss well and sprinkle some finely chopped coriander leaves. Mix well.
- When boiling the chickpeas make sure to salt the water as that’s going to give taste to your chickpeas
