Pesto Bruschetta is a super easy, extremely flavorful and delicious appetizer recipe made with 4 basic ingredients - Bread, pesto, cream cheese and tomatoes. 


When it comes to appetizers and snacks, I like dishes that can be prepped in advance and can be assembled in minutes just before the guests arrive. Pesto Bruschetta is one such super easy, extremely flavorful and delicious appetizer recipe. It's really simple and comes together very quickly with minimal ingredients.

Key Ingredients for Pesto Bruschetta

The main players for the Pesto Brushchetta recipe are bread, cream cheese, pesto and fresh ripe tomatoes. Use the best quality ingredients available to you to get the most out of this recipe!!

Bread: You can use bread of choice like baguette or french or Italian bread. I sometimes use regular bread slices too and just cut them in 4 squares or triangles. Use a grill pan to give a fancy look to the bread. The grill pan is not mandatory and doesn't alter the taste but the grill lines definitely enhances the look of the bread.

Pesto: Make a Pesto of choice preferably ahead of time. You could even use store bought but I generally prefer making a huge batch and freezing as that way I have a pesto at hand whenever needed. For this recipe, I am using my Spinach Basil Pesto.

Cream Cheese : To make things nice and creamy add some cream cheese. I like to cut these into mini rectangle slices as it makes it easy to place on each bread slice. You can slice and keep them refrigerated until ready to assemble.

Cherry Tomatoes: Finish off this bruschetta with some fresh and juicy grape tomatoes for that summery look.

Christmas Colors

This appetizer reminds me of Christmas irrespective of any time I make it!! Doesn't it? Love this white, red and green color combo, so vibrant and appealing and so are the flavors together!! Perfect crowd pleaser and recipe for entertaining . Bring it to your Christmas party or for any potluck for that matter. It looks fancy, tastes awesome and takes close to no time to make. For me that's a perfect appetizer.

Step by Step Method:


Slice the bread into ¼ inch thick slices. Heat a grill pan or regular griddle on medium heat. Once hot, drizzle some olive oil . Place the sliced bread and roast for about 1 min or until the side is nice and golden. Flip and cook the other side too until golden brown and crunchy. Remove from heat and keep aside

Now slice the grape tomatoes into round (about 4-5 slice per tomato). Apply Pesto (a teaspoon or as much the bread can hold comfortably) on the crunchy bruschetta slices, top it with some cream cheese (I sliced mine into small rectangles), couple of tomato slices, fresh chopped basil and salt pepper.



That's it, our quick, crunchy and tasty Pesto Bruschetta is ready. Serve immediately with your favorite drinks. Enjoy!!

Ingredients
  

  • 1 Bread of choice Baguette, french bread or Italian am using pre-sliced bruschetta bread
  • ¼ cup Spinach Basil Pesto Or Basil Pesto (Homemade or Store bought)
  • 4 oz Cream Cheese or more as needed
  • 5-6 grape tomatoes
  • salt and pepper to taste
  • 1-2 teaspoon olive oil
  • 1 tablespoon fresh chopped basil leaves optional

Notes

Serve this as soon as its ready to prevent it from turning soggy.
