What are Masala Baked Beans on Toast
Masala baked beans on toast is a flavorful Indian twist on the classic British dish (baked beans on toast).
Baked beans are cooked beans, mostly navy beans, simmered in a tomato-based sauce. They're sold fully cooked, usually canned, and are known for their mildly sweet, tangy flavor.
In the UK, baked beans are a staple, famously served as part of a traditional English breakfast and commonly eaten on toast, hence the name "Baked beans on Toast".
British baked beans are typically vegetarian by default, and are less sweet and smoky than many American versions. In the U.S., baked beans may be sweeter and sometimes contain smoky or meat-based flavorings, so I recommend checking the label for vegetarian options.
While baked beans are often associated with British breakfasts, they're also a pantry staple in many Indian homes.
Instead of keeping the beans plain and sweet, I prefer to cook these canned baked beans with a quick masala of onion, garlic, green chilli, and everyday Indian spices. This elevates ordinary canned beans by making them warmer, spicier, and more flavorful.
Spoon these curried baked beans over crisp toast, finish with melted cheese, onions, jalapeno, and fresh cilantro, and it becomes a hearty, comforting meal.
These Cheesy Masala Beans on Toast, also known as cheesy baked beans on toast, are perfect for busy mornings, relaxed brunches, or whenever you want a warm, filling meal.

Recipe Ingredients

Baked Beans: This recipe uses 400g tin or canned baked beans in tomato sauce. I prefer Heinz baked beans, which are vegetarian and come in a lightly sweet, tomato-based sauce that pairs well with Indian spices. Sweetness and salt levels vary by brand, so taste and adjust seasoning toward the end.
Important note: In the U.S., baked beans are not vegetarian by default and may contain bacon or pork flavoring. Always check the label for "vegetarian."
Bread: Use good-quality bread that toasts well. Sourdough is an excellent choice for its crisp texture, but white, whole wheat, multigrain, French, or pav bread all work well.
Optional: Rub a cut garlic clove over hot toast for extra flavor.
Aromatics: I use red onion, garlic, and green chilli for the base of the masala. Use fresh ingredients for the best flavor.
Bell pepper: I've used green bell peppers for color, flavor, and a bit of crunch. You can also use red or yellow bell pepper.
Spices and Seasoning: You'll need everyday Indian spices such as cumin seeds, cumin powder, coriander powder, Kashmiri chilli powder, garam masala, and salt, along with oregano, to create a warm, balanced Indian-style flavor.
Notes: Kashmiri chilli powder adds color and mild heat. If cooking for kids, reduce or skip it.
Sauce: I prefer using Maggi Hot and Sweet Ketchup, which adds sweetness, spice, and tang. It is available in Indian grocery stores and online. Or you can substitute it with Tomato ketchup or chili sauce of your choice.
Oil or Butter: Use oil or butter to cook the masala. Butter adds richness, while oil keeps the dish lighter and vegan-friendly.
Cheese: For serving, use cheese that melts well over hot beans. A few options that work well are Cheddar, Monterey Jack, mozzarella, and pepper jack.
In addition to the above, you will also need Lemon juice, spring onions, and fresh cilantro, which are added at the end for freshness.

Toast the Bread

1 - Heat a griddle or pan on medium heat. Spread a thin layer of butter on the bread, then place it butter-side down on the hot griddle.

2 - Toast for 1-2 minutes until that side is golden and crisp. Apply butter to the top of the slice, then flip to cook the other side.

3 - Toast for 1-2 minutes per side until both sides are golden and crispy. You can also air-fry the bread at 370°F for 3-4 minutes, until crisp. Or place the bread in the toaster and toast until golden.

4 - Rub a garlic clove on the warm bread
Assemble the Beans on Toast

1 - Place your freshly toasted slices on a plate or board. Generously top each piece of toast with masala beans. Spread evenly to the edges so every bite is flavorful.

2 - Top with cheese, chopped red onions, green chili, or jalapeno (optional).

3 - Place the assembled toast in a preheated air fryer and air-fry it at 350°F for 3-4 minutes. You can also bake it in a preheated oven at 400°F for 6-8 minutes, or broil it for 1-2 minutes, until the cheese is melted and lightly golden.

4 - Finish with a sprinkle of chaat masala and serve immediately. Cut in triangles or squares if needed.

Serving Suggestions
Serve Cheesy Masala Baked Beans on Toast hot for breakfast, brunch, lunch, or a quick snack or appetizer. You can also serve it :
English Breakfast-Style: Turn this into a hearty English breakfast by serving the masala-baked-beans toast with eggs, sautéed mushrooms, roasted tomatoes, and hash browns. The spiced beans replace classic baked beans while keeping the meal's comforting structure.
As a Dip: To serve it as a dip, transfer the masala baked beans to an oven-safe dish, top with cheese, and bake in the oven or air fryer until melted and bubbly. Garnish with chopped onions and cilantro, then serve hot with crackers or crostini.
You can also serve these beans with baked jacket potatoes, paratha, pav, or garlic bread for an Indian-style or fusion twist.

Storage Instructions
Store leftover beans in an airtight container in the refrigerator for up to 3 days. Keep the beans separate from the toast to avoid sogginess.
Reheat gently on the stovetop or in the microwave, adding a splash of water if needed. The beans can also be frozen for up to 2 months.

Recipe Tips
- Choose the Right Baked Beans: For best results, use Heinz baked beans, as their mild, tomato-based sauce pairs well with Indian spices. Note that U.S. baked beans are not vegetarian by default, so always check the label for "vegetarian." British-style baked beans are typically vegetarian and have a noticeably cleaner, more distinctive flavor.
- Adjust Sweetness Based on Brand: Baked bean brands vary in sweetness and salt levels. Taste the beans once they are warmed and adjust the seasoning as needed. If your baked beans are on the sweeter side, drain some of the bean sauce (do not rinse) before adding them to the masala for a more balanced, savory flavor.
- Control the Spice Level: Kashmiri chilli powder adds vibrant color and mild heat, making it ideal for family-friendly masala beans. Reduce or skip the green chilli when cooking for kids. If the beans taste too spicy, balance the heat with a little extra bean sauce, tomato ketchup, or a small knob of butter.
- Get the Right Consistency: Beans should be saucy, not watery. Simmer just until heated through. Overcooking can make them thick and dry. If needed, add 1-3 tablespoons of water to loosen the sauce and restore a silky consistency.
- Toast the Bread Well: Use thick slices of bread, such as sourdough or pav, and toast until crisp and golden. Assemble the masala baked beans toast immediately to prevent the bread from becoming soggy.
- For the vegan baked beans recipe: Use oil instead of butter when cooking the masala, and skip the cheese or use a dairy-free cheese alternative to keep this recipe completely vegan.
